"Sue's Simple Paella"

This is a simple version of traditional paella. You can add seafood
in the last five minutes if you want to be extravagant, or use tempeh
for a vegetarian meal.
Ingredients
1 tblpsn olive oil 500 g organic chicken thigh or breast (or tempeh)
cut into bite size pieces
1 onion, chopped
1 chorizo sausage, chopped (replace with vegetarian sausage or leave
out)
1 cup basmati rice 1 tspn ground tumeric
1 x 425 g can chopped tomatoes, drained. Keep liquid
1 red capsicum, chopped
2 cloves garlic, crushed
1 small red chilli, de-seeded and finely chopped
2 cups (500 ml) chicken or vegie stock (made up with saved tomato juice)
250 g cooked prawns, peeled (optional)
1 x 425 g can cannellini beans, rinsed (optional)
100 g green beans, topped and tailed
2 tblspn chopped coriander leaves

Method
Use a wok or a large frypan. Heat over medium heat, add oil and cook
chicken or tempeh until golden brown. Remove and drain on a paper towel.
Cook the chorizo until sausage begins to crisp. Remove and drain with
chicken. Clean wok. Add fresh oil, cook onion until soft. Add rice and
tumeric and stir fry for 2 minutes, then add drained tomatoes, capsicum,
garlic, chilli and stock. Bring to boil, then reduce heat to low and
cook slowly for 10 minutes. Add beans, cook further 5 minutes with lid
on. Add chicken and prawns (if using them). Toss and heat through. Stir
in coriander and serve with lemon wedges.
