Organic Vegetable Koftas in Tomato Sauce These koftas are Indian-style vegetable balls that make a quick and easy meal. You can vary the vegetables and use whatever you have on hand, e.g., try sweet potato and spinach. Ingredients (organic): 2 cups cauliflowerettes Method: Combine all the ingredients (except ghee and tomato sauce) until well mixed. If quite wet, add a little more flour; this will make it easier to handle. Roll into balls or, alternatively, just drop rounded tablespoon amounts into hot ghee. A wok or frypan works well; heat to about 180° Celsius. Carefully lower in kofta balls; do not overfill pan. Fry until they begin to colour, then lower heat and continue cooking for another 5 minutes. Remove and drain on paper towels. Cook up your favourite tomato pasta sauce (approx. 3 cups) and add the koftas; they will soak up some of the sauce and become luscious and plump. Serve on a bed of rice or egg noodles.
