Organic, Self-Saucing Chocolate Pudding

This is a scrumptious chocolate pudding with its own sauce baked in, and is very quick and easy to make. So while the nights are still cold and comfort food is okay every now and then, let's have one more chocolate recipe!

Try to use organic ingredients where possible. I like to cook this in a round casserole dish.

Ingredients – Pudding
1-1/2 cups self-raising flour
3 tspns cocoa powder
1/2 cup butter
3/4 cup castor sugar
2 eggs
3/4 cup milk
100 grams dark chocolate, chopped (optional)

Ingredients – Sauce
3/4 cup brown sugar
1-1/2 tbspns cocoa
1-1/2 cups boiling water

Method
Grease casserole dish, then use it to mix in cream, butter and sugar till light and fluffy. Add eggs and mix well. Sift flour and cocoa. Stir in half milk and half flour and repeat. If using chopped chocolate, add to the cake mix.

Combine brown sugar and cocoa. Sprinkle on top of mixture and gently pour over boiling water. Bake at 190°C for 50 minutes. Test if ready with a cake skewer.

Serve with ice cream. Yum!
