Healthy Homemade Frozen Treats

With he warmer weather here, I thought it was time for some no-fuss
frozen treats. The first is more appetising for adults and the others
should appeal more to the kids. The lemon ice-cream is possibly the
quickest ice-cream you can make. You can substitute any citrus fruit
(use organic to avoid the wax on skins), you don't need an ice-cream
machine, and there's no need to beat it while freezing. For the kids,
berry pops are healthy and yummy.
Lemon Ice-cream
Ingredients
3 juicy organic lemons (rind of 2, juice of 3)
180 g icing sugar (add in increments of 10 g if you want it sweeter)
425 ml organic cream, chilled
2 tblpsn iced water
Method
Mix the fine zest of the lemons with the juice and sugar. Put aside.
In a chilled bowl, whip cream with water until soft peaks form. Now
whisk in the juice mixture. Pour into chilled, shallow freezer tray.
Cover and freeze fast, until firm (i.e. turn freezer up to high). Do
not stir. For a dinner party you can pour into fruit cut in half and
hollowed out. Then when serving, cut into quarters with a sweet brandy
snap or fruit salad.
Berry Pops
Ingredients
11/2 cups frozen berries (try blueberries or raspberries from the Co-op)
1 cup organic yoghurt (try Barambah)
1 mashed banana
2 tspn honey (optional)
Method
Put all ingredients into a plastic jug and blend with a hand-held drink
blender. Dollop into icy pole holders and then bang on bench to remove
air bubbles. Top up again level with the top, push in holders, bang
gently again, as this keeps the sticks in place. Freeze.
Tips: the most economical way to buy berries is frozen in a one-kilo
box. Use the good old-fashioned icy pole trays, which you can buy from
Gone Bonkers. If you add a cup of milk and a tablespoon of protein isolate
powder, you can make the Berry Pops into a smoothie for breakfast or
lunch.
For a more economical icy pole, you can use 11/2 cups of mashed banana,
1/2 cup of yoghurt, a dash of honey and 1/2 teaspoon of cinnamon. Yum!
