Coconut Muesli Slice

This is a chewy slice that requires no baking and is very easy. Choose
your favourite fruits and nuts, and you can create your own personalised
muesli bars.
Use organic ingredients where you can, and if you like, omit amaranth
and replace with more nuts or less fruit, or replace with raw or toasted
sesame seeds. As you can see, it's a very versatile recipe.
Ingredients
(1st group)
1 cup rolled oats
1 cup coconut
1 cup dried fruit (such as sultanas, chopped prunes, dates, figs, ginger
- choose one or combine a few)
1/2 cup sunflower seeds
3/4 cup chopped nuts (such as peanuts, pecans, walnuts, macadamias -
again, your choice)
1/4 cup amaranth, cooked
Note: to cook amaranth, rinse, use 1 part amaranth to 3 parts liquid,
in this case, water. Simmer for 30 minutes, then rest for 10 minutes.
It will swell to 3 times the original amount. You will end up with more,
but to cook less is a bit of a waste of time. This way, you can use
left over amaranth in a salad, soup...whatever!
(2nd group)
8 tblspn butter
1/2 cup brown sugar
2 tblspn honey
2 tblspn peanut butter
Method
Take a slice tin with sides about 2cm high, grease and line with baking
paper.
Place the second group of ingredients into a saucepan. Heat gently and
simmer. Stir often until mix looks quite sticky. Mix first group of
ingredients in a large bowl. Pour butter sauce in and stir to mix well.
Press into a lined tin and chill in the fridge. When partially cooled,
cut it into serving sizes and chill thoroughly while still in the tin.
When firm, remove from tray and enjoy!
